I apologise, the break in the recent heatwave which was being enjoyed by many here in the UK is down to me making our refreshing and tasty homemade Strawberry Yogurt Lollies! It was almost like doing a little rain-dance! I’m really not a fan of baking hot days. Having a so-called English rose complexion of pale skin and blue eyes usually means I try to avoid being out in the hottest part of the day, in fact it has been known for me to spend far longer than usual down the freezer and chillier aisles in the supermarkets when the weather hots up!
Of course ice cream and ice lollies are a great summer time treat for
keeping cool too! These homemade strawberry ice lollies were just what I needed last week. Being made with yogurt does mean that these homemade strawberry lollies
aren’t as creamy as an ice cream, but depending upon your point of view
that could be a good thing – after all there’s fewer calories in yogurt
than cream for a start! As well as being super
refreshing and tasty, they contain real fruit pieces and just a small
amount of added refined sugar meaning that I can enjoy one without
feeling guilty about it.
These homemade popsicles are seriously easy to make. A quick prep of the strawberries, mix with the yogurt and then spoon into the lolly moulds before popping into the freezer. Now how easy is that! In fact it’s a great child friendly recipe for the summer months (though
of course depending upon the child’s age some supervision may be needed
when chopping the strawberries and melting the chocolate!)
Coating Frozen Lollies in Chocolate
Now a word of warning about coating your ice lollies in chocolate. If you find that your popsicles are melting slightly or have any moisture on them at all don’t dip them into the chocolate. Seriously! Any moisture getting into the chocolate will cause it to seize making it completely unworkable – its destination will be the bin!
I learnt this the hard way! I’d intended to coat our strawberry lollies with a lovely white chocolate, though having seen a few on-line recipes and Youtube videos demonstrating the process I was in two minds about dipping them. My instinct suggested that the chocolate could easily seize and yet they’d produced a popsicle with a beautiful neat chocolate line which made the homemade iced lolly look incredibly inviting. My OCD tendencies really wanted that neat, crisp line. I really should have listened to those reservations because as soon as the lolly, which was very slightly starting to melt, (after spending just 3 minutes taking a picture!) touched the white chocolate it seized instantly. It was such a waste!
So, rather than risking spoiling the chocolate simply use a spoon to coat it. Granted there won’t be a beautifully crisp line as you’d get by dipping, but that’s surely a compromise worth taking rather than wasting good food!
As for where to buy your plastic lolly moulds from, well this colourful set came from Sainsurys, though I’m more than sure lots of other high street and on-line retailers will sell something similar. Although I love the look of a traditional lolly with a wooden stick, these were great for capturing those dribbles of strawberry yogurt!
So, here’s how to make Strawberry Yogurt Lollies

supervision may be needed depending upon the age and skill of the
child). Containing fresh strawberries, yogurt and just a small amount
of added refined sugar, these homemade lollies are a great guilt free
summer time treat.
Hands on time: 20 mins Yield: 4
Plastic Lolly moulds (see note d below)
For the lollies
- 8 Strawberries
- 2 tsp Caster Sugar
- 6 tbsp Vanilla Yogurt
- 100g Chocolate (use either white, milk or dark)
- your preferred Sprinkles, such as hundreds & thousands and freeze dried strawberries.
Notes: a) If your lolly is starting to melt, or has any moisture on it at all, DO NOT dip the lolly in the melted chocolate. The moisture from the lolly will immediately seize the chocolate making it completely unworkable. If there is any moisture on the lolly, simply use a spoon to drapes it over the lolly like we did. If in any doubt, avoid dipping them and coat them using a spoon! b) The chocolate will set almost immediately once in contact with the frozen lolly. Therefore decorate each lolly individually before coating the next lolly in chocolate. c) Carefully wrap any spare lollies in greaseproof paper and place into an airtight container before freezing. d) If you don’t have any lolly moulds consider using small yogurt containers with wooden sticks reserved from shop bought lollies.
